Three of the four loaves are pre-order. The baguette is not, because it does not keep and we bake it twice a day anyway.

When it is gone

It is gone. We do not bake a second batch of croissants at noon to catch the people who missed the first, because a croissant baked at noon is a worse croissant. Pre-ordering is how you stop losing that race.
